Lunch Box Salad

Need an easy way to sneak in a good couple of midday vegetable servings? Center your lunch around this salad and you're sure to feel refreshed!

Lunch Box Salad
Makes 2 hearty servings

1 cucumber, peeled and chopped og√≥rek
1 sweet yellow pepper, chopped
8 cherry tomatoes, quartered
1/2 lemon
2/3 cup Greek yogurt
Salt and pepper to taste

Combine the cucumber, yellow pepper and tomatoes. Squeeze juice from lemon over salad and toss. Mix in yogurt and season with salt and pepper. Refrigerate until lunch time.
