Baked Peach Oatmeal

Just a comforting and delicious oatmeal. Should breakfast expect anything more?


Baked Peach Oatmeal

3 cups old-fashioned oats
1/4 cup packed brown sugar
2 teaspoons baking powder
3/4 teaspoon kosher salt
1/2 teaspoon cinnamon
2 eggs
1-1/2 cups milk
1/2 cup butter, melted
1/2 cup maple syrup
1 teaspoon vanilla extract
1 can (15 ounces) sliced peaches, drained and chopped
1/2 cup chopped walnuts

Combine the oats, brown sugar, baking powder, salt and cinnamon. Whisk the eggs, milk, butter, syrup and vanilla; stir into oats. Stir in peaches.
   Pour into a greased 8-in. square baking dish and sprinkle with walnuts. Bake, uncovered, at 350° for 35-40 minutes or until golden brown. Serve warm with milk or yogurt. Serves: 9
