Bircher Muesli

Having spent the Christmas holiday away from home, we splurged Christmas morning and had breakfast at the hotel. The assortment of offerings was beautiful and my heart was instantly swept away by the Bircher Muesli. Easy to prepare, wholesome and fun to dress up - this is now my standard breakfast.

Bircher Muesli

Bircher Muesli
Serves: 8

2 cups old-fashioned oats
1/4 cup unsweetened shredded coconut
1/4 cup golden flax seeds
1/4 cup sunflower seeds
1/4 cup spelt bran
1/4 cup golden raisins, chopped
3 tablespoons chia seeds
2 dried figs, chopped

In a large bowl (preferably one with a lid), combine all ingredients. Add just enough water to cover the mixture. Cover and refrigerate overnight. (Muesli may be stored in an airtight container for up to 2 weeks).

   To serve, stir 1/2 cup hazelnut or almond milk into each serving. Add a heaping dollop of plain yogurt and then finish with toppings of your choice such as: mashed sweet potato, grated apple or carrot, sliced banana, chopped pear, poached rhubarb, and berries.
