Today's chilly wet air has kept Lottie and I indoors today, so we figured what could be better than a little brunch. I've been waiting for the perfect day to give Polish pancakes a try and today was just that day. These little cakes are perhaps the best that I have ever made! Rich and egg-y, tender and moist, they're just exquisite.
Polish-Style Sweet Pancakes
Serves 3-4
4 eggs, separated
1 tablespoon butter, softened
1 teaspoon sugar
Pinch salt
1 cup milk
2 tablespoons gassed water
1 cup flour, divided
In a mixing bowl, beat the egg yolks, butter, sugar and salt until thickened and fluffy. Gradually whisk in the milk and water. Whisk in 3/4 cup flour. Cover and let rest for 15 minutes.
In another bowl, beat the egg whites until soft peaks form; fold into batter along with the remaining flour until thoroughly combined. Immediately cook on a hot buttered griddle. Dust with confectioners' sugar and serve with honey and jam.
